Courgettes what can I make?

My very nice neighbour who grows her own kindly gave us four huge courgettes. Now I've been putting them in my Spag Bol lasagne etc but I want to make sure I use them all and not for them to go to waste.
It's a bad month for us money wise, but I've got enough food in to last two weeks roughly, but I've got plenty in so all of us do not go hungry.
Has anyone got any inventive recipes that use up courgettes???

I like cutting them into ribbons with a peeler and adding to spaghetti and stir fry dishes for a different texture.
I'm sure I've heard of people substituting the spaghetti for the courgette ribbons to make the meal healthier0 -
I use them in a veggie bake with onions,carrots, tin of tomatoes and any other fridge bottom veg which needs using up.
Throw all the veg in a pan with a splash of water, bring to the boil and simmer for a few minutes then put in an ovenproof dish and sprinkle with crushed crisps and grated cheese.
I usually have it with chicken or sausages.
You could also make courgette cake for afters.Fully paid up member of S.A.B.L.E.

You could use long slices of instead of lasagne sheets for making a lasagne dish or instead of aubergines and making a moussaka.
Stuffed courgettes are good too. Cut lengthwise, scoop out the centres, chop up the flesh and use with other ingreds to stuff. You really can use anything, chopped chicken, mince, tomatoes, mushrooms. I tend to use mushrooms, tomatoes, onions, peppers and the flesh of the courgette with garlic and herbs made into a thick sauce. Bake for about 30-40 mins and add some grated or sliced cheese to top during the last 5 mins.0 -
My two favourite recipes with courgettes is creamy courgette lasagne (I think in BBC Good Food) and courgettes halved, the seeds scooped out (Maybe put them in a soup so not to waste) and then baked, then pour over a spicy meat sauce (I used lamb mince) then bake again with cheese on top. Was delicious.

I've also had them as 'chips': about the size of French fries, deep fried and then dried on kitchen paper. Very yummy!
When I've had a glut of courgettes, I open freeze them in slices for adding to casseroles/sauces through the winter. Unfortunately this year the plants didn't do well at all.:(0 -

I saw a James Martin TV show the other day where he stuffed a hollowed out loaf of bread with chargrilled veg including courgettes, peppers etc, cheese and pesto (make your own if you grow herbs, much cheaper!) and then sliced it up.
It looked totally delicious and very filling.
I have made cheddar and courgette muffins successfully in the past and have recently seen a few recipes floating around for chocolate and courgette cake0
