Mortgage Valuation Fee

My husband has an an AIP agreed with the Chelsea. He is due to go in tomorrow to do the complete application and also give them the mortgage valuation fee. I know we give them the fee when the full application is completed but we have yet to pick out a new property. Do they cash the cheque for the valuation fee or do they just hold onto it until we tell them which property we have chosen and had the offer accepted on?
