Uses for tomatoes?!

    A couple of years ago I had lots of tomato plants so was lucky enough to have lots. I made a few batches of Hugh fearnley whittingstalls tomato sauce and froze. This made pasta sauces mixed with marscapone sometimes and also made a great soup base that was to tomato, minestrone, tomato and veg etc.
    I am very envious. My parents have a greenhouse but only did three plants this year so extras are a bit sparse.

    I too go with the tomato sauce idea. I make my own regularly, its miles better than the Sacla red pesto and can be smothered on everything!

  • This is my first year growing tomatoes so I was pleased to find this thread. Not really into chutney or jam but willing to try the oven dried, the roasted and tomato sauce for freezing. Anyone have a favorite recipe or method to share? Thank you.

  • I have two favourite recipes for tomato sauce, and it all depends on what I have in. Either roast a load of tomatoes and onions with garlic, oregano and drizzled with olive oil or a load of tomatoes and red peppers.
    Once roasted, blitz and then cook in a pan for about 30 mins or so adding a splash or two of mushroom ketchup, freshly ground black pepper and a glass of red wine (decent stuff that you would drink), until it's reduced to the right consistency, then freeze in appropriate sized containers. (I use mushroom ketchup as am vegetarian, you could use Worcestershire sauce, or omit altogether). I sometimes add a little smoked paprika for a bit of a change.
    For freezing, to save on containers, when cooled place in freezer bags in a container and freeze, then remove from container when frozen.
