I suggest that if you do intend to write to 'a airline ombudsmen or go to CAB' you provide them with all the necessary information right at the beginning.

A small claims court would almost certainly uphold OP's claim. Easyjet would pay up rather than see it go to court as journalists lie in wait for this sort of thing. But It's probably not worth the effort unless you like fighting for the principle of things.
Easyjet needs to do some staff training and clarify its processes and FAQ/Ts and Cs to fix this sort of thing. If it's so easy to achieve the goal by booking separate outbound/inbound flights or by using the phone, why didn't Easyjet advise this upfront?
All in all "we are not a refundable company" are very weasel words indeed and Easyjet's reputation has just plummeted in my estimation.0
