That hotpot recipe looks gorgeous! I really enjoy reading Frugal Queens blog, especially since the newer posts on A Girl Called Jack blog aren't the same as they used to be, and a lot less often these days.
I have tried quote a lot of Frugal Queens recipes and they are all delicious. The mash topped fish pie is also a firm favourite in our house

Hairy Bikers sausage casserole always goes down well in our house - bit like a chilli with sausages.
For a 'grown up' sausage casserole I like Tana Ramsay's recipe.

I always adapt it (no chorizo, and no pancetta unless some bacon available) but it's really tasty.
I think cutting sausages up into meatball size pieces definitely makes them go further. Works for toad in the hole too. It's as if provided there's some meat and flavour of meat that's enough for the average carnivore plus it's good for you to fill up on veg instead.0 -

I would squeeze the sausagemeat gently out of the skins (or use a knife to remove the skins) and make mini meatballs. You can fry or bake them, and they are delicious to eat with pasta, or in many other dishes (maybe mini toads in the whole with sausage-meatballs instead of sausages?) Once cooked you can freeze them for another time if you like. You can even throw them into soups, or a well insulated lunch box as a snack.
Sausage rolls are good too. Squeeze meat out of skins, mix with a little grated apple and some breadcrumbs and seasoning (lots of variations for sausage rolls really), and roll up in some puff pastry!

I had a similar problem a few weeks back. Only mine were defrosted for the BBQ so had to cook them that day, I made,
Sausage meat and mince meat loaf. Sliced when cold and frozen.
Meat balls in tomato sauce then portions frozen.
Sausagemeat plate pie, eaten over two meals. Lovely but didn't want to see another sausage again ( oh matron) for a few days .
