ideas for using leftover bacon joint

I'm looking for some ideas for tonight's evening meal to use up a large piece of leftover bacon joint I need to feed 4 adults and 1 child. 1 adult does not eat cheese . TIA Biff

Thank you for all of the fantastic suggestions these will be kept for future reference we eventually settled on leftover bacon joint with bubble and squeak cakes topped with poached eggs it was delicious.
