ideas for using leftover bacon joint

I'm looking for some ideas for tonight's evening meal to use up a large piece of leftover bacon joint
I need to feed 4 adults and 1 child.
1 adult does not eat cheese .

How big is a 'large' joint?
Serve it up like gammon with fried eggs etc?

Ham and chips
Soup. Pea and ham, or a bacon and potato .
Pasta bake with a tomato sauce, topped with bread crumbs .
Thinly sliced wrapped around a leak, baked with a white sauce.
Just a few ideas to get you started.

What did you use your bacon joint for in the first place?? I have a large one in my freezer which i paid £1 for and no idea what to do with it lol

We do a version of colcannon (minus the cabbage!) We fry sliced onions, then add the gammon chopped up, then peas and sweetcorn added to the pan until they are defrosted and then stir the mixture into mashed potato (mashed with butter and lots of milk so it's sloppier than usual). We then put it into a dish and top with breadcrumbs and grated cheese until the cheese melts but if you don't like cheese then you could put cheese across half of it so there's a portion minus the cheese (if that makes sense). It tastes delicious and it's quick and easy to make.0

I would probably either use it up and make a quiche with it or chop up in small pieces and make up like a tomato and herb sauce and serve as a pasta bake. Both of these always go down well when I have bacon/ham joint to use up.0

Depends what you used is for initially as I would want to make it different.
A bacon, leek and apple casserole?
Sliced with baked potatoes and salads?
"Ham" eggs and potatoes (chipped or wedges)?
Bacon and pea risotto?
Bacon and mushroom or leek pie (pastry or potatoe topped).
Pasta bake with tomato sauce and roast veggies included or a white sauce with mushroom, peas or leeks.
Bean casserole with bacon?If you've have not made a mistake, you've made nothing0 -
I often lean slightly dutch-indonesian with left over meat
-> chop it up into cubes
-> Toss into a pan with some fresh/left over pan-cookable vegetables (mushrooms / onion / peppers / garlic)
-> Add some carbs in the form of leftover/fresh precooked rice or cous cous
-> generous sprinkling of a few spices, whatever you have along the lines of tumeric/paprika/chilli powder type spices
you end up with a nice, slightly spicy fried rice/vegetables/leftover meat dish
Can be served with a fried egg on top which you then chop thru it
Also chopping some pickles/gherkins and stirring them in cold as you serve is a nice accent too
Randomly I may even have a pic from one I made the other day I was describing to someone.... let me see if i can dig it out...0 -
Not much help for tonight's meal but I always slice up my boiled bacon/gammon and freeze it in portions for future meals. And I always use the stock for making lentil and veg soup, it's delish!0
