Unfortunately, in many cases, all the signature proves is that a signature was given. It does NOT necessarily mean that the signature was by the purchaser, or even that of someone at the chosen delivery address. Just because a signature exists on a POD doesn't mean the item was delivered to the chosen address, at least not without supporting evidence (such as a photo of the property).
Sorry, but a signature does usually prove to the required level the item was delivered to the address. The address delivered to is recorded, as is often the name (given) by the person signing for it. It doesn;t have to be the exact address posted to; it can, for example, be the neighbours address where the item was delivered to if no answer was obtained at the mailing address. A photo of the address is not required, just a record of the delivery address. Try convincing a judge otherwise.
At the end of the day, such cases in court would be decided simply based on 'the balance of probability' and not 'beyond all reasonable doubt'.
I'm sure the postal delivery service involved will help you if necessary as otherwise they will have to cough up for not delivering the item.0
