Best Way to Do Vegas!

Hi!
Thinkin of booking Vegas for a trip next year, maybe May.
What is the best way to do it? Usually I just book a package holiday to the Carribean.
But what is the best way to book Vegas, money wise. Bookig flights/hotel seperate etc. And when is best to book.
Also wondering how much spending money the average guy would need, as I imagine it is quite expensive for food and drink over there.
Any help or any further tips would be greatly appreciated.
