    Another option is a solid wood worktop but give it a few coats of heavy duty polyurethane varnish. It makes for a very tough finish and you can always sand it back and re-coat if necessary. You can even rub it back with fine wire-wool to give it a nice matt look.

    I don't understand why people oil wooden worktops, it needs so much maintenance.

    And Polyurethane varnishes will discolour and also flake, then try and sand it off and re-coat and you will find its an absolute pigs ear.

    There is no "Holy Grail" wooden worktop finish but the better ones are the Osmo oils, good quality Danish oils are good as long as theres plenty of coats applied but people don't like the hard involved which pays off because the end result is a hardwearing surface that can easily be re-finished.
