batch cooking tomato sauce recipe

Hi there

I want to make a massive batch of tomato sauce so that I can freeze it for adding to meals/base for soups etc can anyone help me out with a recipe - I will probably be using cheap tinned toms for this

I tried making one in the slow cooker before but it had a funny taste (this could however have been the fact it was a new slow cooker :rotfl: )

    Hi boredjellybean!

    Excellent idea of batch cooking tomato sauce, I do it all the time and it's a real life saver knowing I always have some lurking away in the freezer! Plus even if you do forget to defrost it the night before (not that I've ever done that... :shhh:) it defrosts pretty quickly so there's no need to dash to the shops for an emergency jar of sauce.

    The recipe I use for the sauce does tend to change depending on what I have in the cupboards but roughly it goes as follows (this is for one quantity, so just multiply as necessary!)

    1 onion chopped
    2 cloves minced garlic
    2 tablespoons tomato puree
    1 carton passata
    1 tablespoon sugar
    1/2 teaspoon oregano

    Fry up the onion and garlic in some fry-lite until softened, throw in your carton of passata (or tinned tomatoes) with your puree, sugar and oregano. Bring to the boil and let it simmer for about 10 minutes. Done!

    I like to use passata as I don't have to whizz it up at the end with a hand blender for picky people who don't like tomato bits!
    If I have red pesto in the fridge I'll throw in a teaspoon of that as it makes it nice and rich. A few torn up basil leaves are also nice to add in as it simmers.
    Sometimes I add in smoked paprika and a good glug of chilli sauce if I want a spicy tomato sauce, it can be nice for a change!
