You can buy these cupboard potato dishes in B&M - rosti, potato brunch with bacon, onions and egg and fried potatos - and they are great on the little camping rings. I often have these with a can of beans (before my Coeliac diagnosis, beans and sausages) and a sprinkle of cheese for breakfast - fills you up for the day and is surprisingly tasty.
Other than that - quick cook pasta, chorizo, a tin of mixed veg or peas and some passata makes a great quick dinner (again, pre Coeliac - if anyone is avoiding gluten, polenta cut into chunks and fried works as a nice alternative).
We love camping and when we go to festivals, I hate paying for awful food so we like doing a lot of things already suggested like making flapjacks, freezing dishes and popping them into a cool box which is rarely opened (I do spicy diced chicken and use these for pittas and salad) and make dishes using tins/packet versions of things.
Fruit and veg can be got in however you can - a little dried fruit here, an apple there and I pack the frozen dishes (like stew and soup) with veg and use canned pulses for a quick curry some nights."We always find something, hey Didi, to give us the impression we exist?"
