Saving/investing while a non-resident

I may soon (in 6 months) be living overseas and will be able to save something every month, say up to 1k. I won't be opening a bank account where I am as I will only have a tourist visa. It's not enough for any overseas advisers to be interested in (I assume, though I may try to piggy back onto OH's adviser).
Can someone point me in a direction of a website or reading material so I can explore my options please? I'm looking for lowish risk for most of it but I know I can use my H&L Vantage account (never used, opened automatically when I took out SIPP) if I do want to invest.
So far I've identified Conister Bank on the Isle of Man which has a 2 yr rate of 2.25% but am wondering what my other options would be? Thought of peer to peer lending - I can't see anything saying you need to be UK resident? I can open an account in Spain but best rates there are much lower than here.
I'll still be filling in a tax return as will have rental income (will be sending off a NRL1 nearer the time) so UK interest would be declared and taxed. Any savings before the end of the tax year will be lumped into my SIPP while I still can.
