    Why would the seller agree to set up a paypal account?
    They originally wanted cash on collection which would provide all the protection that both buyer and seller need, but if they were now to accept paypal with the OP organising a courier, they could be leaving themselves open to losing the goods and the payment as they would have zero seller protection. (I'm not implying that the OP is anything other than 100% trustworthy, but how is the seller in question to know if this is the case?

    If the seller posts the item to the PayPal verified address signed-for delivery, he will be protected against chargebacks, also if he sends it insured he will be protected against damages through delivery or received empty box claims.
    At least both buyer and seller are protected if paid through PayPal, what will be the buyer's protection if paid by bank transfer or cheque ?

    I think you miss the point of the thread.

    Your facts are completely right, but this is a private Facebook sale where seller was expecting cash on collection, it is the OP who wants it posted. A seller outside of eBay is not required to sign up to a PayPal account just to make a buyer feel secure, the buyer can either pay using an unsafe method or walk away.

    You are missing the point that in the case in question it is the buyer who is organising the delivery service so the seller will not be protected for loss, damage or non delivery.

    And expecting the seller to spend time and money packing the item and being in for the carrier to collect. As has been said, FB selling pages have the expectation that the buyer will collect in person and pay cash.
