    I would go for some sort of casserole that you can pad out with lots of vegetables, mashed potato/bread. You can get some stewing beef or some neck of lamb for a couple of £ or better if you get whoopsies. This should sort your dinners for a couple of days.

    Lunch would be HM soup, beans on toast, pasta with tomato sauce or pesto, scrambled egg...

    Depending on what's already in the cupboard you may have change :)

    I am doing great with using things i have in freezer for food.

    We have a great big field across the road from the house for blackberrys so its fab for us and the little baker is making great treats plus has been doing meals with me. :)

    op have you had a look at the a girl called jack blog I have found alot of great cheap meals from there.

    £41 is not too tight a budget I think, and there are already some great suggestions....
    Too add to this, my only other suggestion would be to buy a chicken. (Raw, whole one). Aldi do chickens (small) for £2.99. You will be surprised at how this one bird can do a multitude of meals.
    1) Roast it, whole, there is one dinner, served with veg etc...
    Next the important bit...
    2) Chill the remaining bird in the fridge, and the next day, pick off the remaining meat. Take your time, can be quite fiddly, however I can guarantee there will be a whole lot of meat remaining.
    3) Here are your suggestions for following meals.
    - Chicken casserole ( can mean a multitude of things, gravy based, tomato based, white sauce based) Bulk out with veg, pulses, rice or pasta.
    - Chicken Curry, use spices (if you have a spice rack) if not a jar of sauce.
    - Chicken sandwiches for lunch.
    - Chicken pasta, tomato based, add veg.
    And finally...
    Take your chicken carcass and add to a large pan, cover with water and any diced veg, simmer for at least an hour and you will have the most marvellous chicken soup. Obviously remove the carcass!


    There are 3 dinner suggestions and two lunches from one bird. Although for me I would have the soup with crusty bread (2 large ish par baked sticks are around 40p I think) as a dinner!

    The trouble is, am, that an anxious new mser has not been back since her first post on the 21st.

    The disgraceful muck slung by another fairly recent arrival[June]was probably enough to drive her away.

    But your helpful post can at least be read by others needing good meal-planning on a budget and it's marvellous that you are helping on similar Threads, especially when we know that you are a Cook by trade:-)....stealthelf's daughter take happy note!

  • The thing is it is a fair point to remind people not to send money. I have been on MSE a long time and a Facebook group of MSE'rs and it happens A LOT. More than you think, people can get quite a lot of money out of groups like this. I am not saying the OP is the same, but perhaps a mod ought to make the point.

  • In all this blaming and insinuation no one has thought to ask the original poster how they are getting on with the thing they needed advice for, so AFRESHSTART, how are you getting on with the budget you have and the meals you had to get from it? I hope you have enough for your needs and would like to think you're not feeling too battered and hurt by comments made to let us know how it's going now.     Thanks Ampers, it always pleases me when I know that I have made a delicious, nutritious meal, that is cheap cheap cheap:). I hate waste and am lucky enough to have a large freezer. I was once advised to buy the best food that you can afford. Therefore not very often do we dine on Steaks or Scallops! However we have some fabulous meals based on Pork shoulder, Beef brisket and Chicken.
