"The vinegar definitely brings a 'pickle' to the party, but the sweetness of the sugar and warm spices balance out the flavours. You can nibble on these as they are, use them as a topping for ice cream, or serve them with a roast."
Makes about 3 pints
1 cup apple cider vinegar
1 cup water
1/2 cup brown sugar
1/2 cup granulated sugar
1 star anise
1 cinnamon stick
2 whole cloves
2 lbs plums, halved and pitted
Combine the vinegar, water, sugar and spices in a nonreactive saucepan, bring to the boil, then reduce the heat and simmer for 5 minutes.
Pack the plums snugly, without bruising them, into one or more heatproof containers. Scoop the spices out of the syrup and then lade it over the packed fruit, being sure to completely submerge the fruit in the syrup, Swirl the containers to remove air bubbles. Allow to cool, and put on the lids. Refrigerate - keeps for up to one month.
- recipe from 'Put Em Up! Fruit'; measurements are U.S. ones, but you can convert, and/or increase or decrease the quantities as long as the ingredients ratios are the same; I bet it would be nice with some ginger as well as the other spices; you can also pickle peaches in the kind of syrup, according to the book, and it would probably work with other similar-sized fruits, e.g pears
