Manchester Airport Terminal 1 with mobility restricted traveller

Hi All
Just wondered whether anyone can give me any insight into T1 at Manchester Airport - we travelled through T1 in May, but were only there for around an hour as the flight was brought forward.
I'm travelling with my parents in October, and my mum has mobility issues. I'd rather not use the horrendously bad service of "special assistance" who left my MIL (who has cerebral palsy) waiting at a gate for almost an hour as they forgot her, and another 2 wheelchair users (we were the last flight).
We are flying at 11am on a Saturday, and having not eaten in T1 since it was done up a few years back, are there wheelchair accessible tables for getting breakfast? I've emailed the airport over a week ago but had no response. If there are issues with accessibility, I would book into the escape lounge which I know is wheelchair friendly.
Any other tips?
