Hi all
I've just been diagnosed with gestational diabetes at 26 weeks. I now have to check my blood 7 times a day and have been put on medication.
I was told to cut down on carbs and have noticed that my glucose levels sore even after only a small amount of carbs. I was wondering if anyone could suggest an accompaniment to go with curry apart from rice or naan. I've tried the cauliflower rice before but wasn't that impressed.

How about 'Slim Rice' ? That's nil carbs (apparently) Bit pricey, but as a treat now and again. I've no idea what it tastes like mind, as I've not tried it.
How did you cook your cauli rice? I just stir fry it in a bit of butter with some salt and pepper. I know it doesn't soak up a curry the same.Over futile odds

I cooked it the same way as you, I'm not sure if it's a texture thing or like you say it doesn't soak the curry up but I just couldn't take to it. That said it's not forever so I could put up with it for the next few months.0 -
Yeah, I know what you mean about the texture, think your mouth is expecting one thing but gets another so it's a bit disappointing!

Have you considered trying cauliflower rice instead of actual rice?

Ahh Northern symathise with you all 3 of my pregnancies were diabetic - wopping babies, but all healthy
Think low carb, cauli rice is great, and you do get used to it, so much so, that even after 20 years I still prefer it.
With my first I totally craved strong cheddar, so I lived off of omlettes.
Steer to whole grains, brown rice - but mininise all white carbs - healthy protiens, salads, sweet potato, celariac etc light fruits such as grapes, stawbs etc

Is it just a case of cutting down carbs? I admit I don't know much about diabetes, but this snippet about quinoa is interesting - it's higher in carbs than couscous, but the low glycemic number apparently means it doesn't spike your blood sugar levels so quickly

http://www.optimalfoods.org lists some low glycemic foods - interestingly, lentils, chickpeas etc. are listed - so maybe go for those kinds of sides with your curry and less of the rice.0
