I want to make some ketchup/sauce but unsure about bottling safety?

    Ok I assumed I was looking for mould or some visible signs. Now I see why people say that tomatoes are ok to can but not once you start adding other veg to them.

    The chart is really helpful and now I see why my jam making has never been a problem!

    Tomatoes are only okay to can if you have the proper canning equipment and you get the acidity levels right.

    Thank you. Yes i've been reading more and really its not for me!

    I'm going to find room in the freezer for the tomatoes i've already cooked. I shall leave the ketchup ones in the jar as they have plenty of vinegar in them.

    The rest of the tomatoes are going to be dehydrated and made into powder.. much safer! I was just looking at ways to keep nutritional content high. Back to the dehydrator. Thanks again for your advice :T

    Hi Angelina and I see you over in the Dehydrator thread. Why don't you make the ketchup up and put on sheets of paraflex or whatever you can use in your machine and dry it and break it up and put into jars? I think that way would be safer.

    I actually want pots of tomato sauce that I can turn into pizza sauces/pasta sauces etc. I have actually been reading and quite like the idea of making tomato paste in the dehydrator but then thats a bit limited isnt it? I don't really use paste that much but sauces most days?
