Car Parking Fine - Advice Please!

Hi all,
First of all, apologies for posting a new thread as I have seen there is a wealth of advice/stickies already in place. However (and admittedly I've probably missed it), I can't find the right advice for my particular problem.
I got a parking fine in my local Sainsburys in April. I'd paid to park for two hours and I think I overstayed (in Sainsburys) for about half an hour. This happened once previously and I ignored it but never heard anything again, so this time I stupidly binned the notice and thought nothing more of it. I've since received a lot of correspondence, which I have been ignoring but I'm starting to worry a bit now. I've also noted that the guidance is no longer to ignore tickets!
I no longer have my parking ticket proving I parked there, but I can prove my purchases on the bank statement. The initial correspondence was from Horizon parking and now it is being sent by Debt Recovery Plus Ltd. Apparently if I don't pay within two weeks they will recommend the client's solicitors initiate court action.
If someone wouldn't mind advising next steps, that would be very much appreciated! Should I approach the store manager? My family and I are familiar to a lot of staff there!
Any help greatly appreciated.

yes, try and get it cancelled by the store manager or landowner

Go complain bitterly to the store manager (not the customer services frump), show your receipts/bank statements and ask him why he is allowing this shower to hassle and harass a regular and loyal customer. Demand that he cancels the ticket or you and your family will be cancelling their Sainsbury's membership. You'll also be warning all your friends.
Remind him that his company's sales figures are not so healthy as to chance the loss of a genuine customer and the likes of Tesco, Morrisons, Asda, Aldi and Lidl will more than welcome your spend with open arms.
But they are not much better - they all have car park vermin too. Just that you start with a clean sheet with them.Please note, we are not a legal advice forum. I personally don't get involved in critiquing court case Defences/Witness Statements, so unable to help on that front. Please don't ask. .

I prefer to be "nice" but assertive. If I were the store manager, I would be more responsive to someone who said "I am a regular customer of your store and have received this "Fine" for the first time in the last 10 years of coming to this store! I heard that you're the person who can do something about it so that I can continue shopping here."
