SWEET & SOUR CUCUMBER
3 large cucumbers
3 large onions
50g salt
570ml white wine vinegar
450g soft brown sugar
1/2 level teaspoon tumeric
1/4 teaspoon ground cloves
1 tablespoon mustard seeds
Very thinly slice cucumbers with skin on & onions.Layer cucs & onions in large colander, sprinkling each layer with salt, put plate on top with a heavy weight on. Leave for 3 hours. Then drain and squeeze as much liquid out as possible.
Put vinegar, sugar & spices in large pan and stir over heat till sugar has dissolved, add drained cucumber & onion and simmer uncovered for 1 minute. Remove onion & cucumber with slotted spoon and put in prepared jars. Boil the liquid mixture uncovered for 15 minutes, pour into jars, seal. Best left for a month before eating.
We eat loads of this and my sister & mum make it too.
I will try this josie:T
If it's as good as the beetroot recipe you once gave me it will be wonderful.
