Herbs to Go !
Planted some various herb seeds in 2 large window boxes and now have , what my neighbour calls , a Vietnam jungle looking array of herbs 
Question is ............. what next ? trim ? harvest ? pick & Dry ?

Depends what the herbs are.
Some pick and dry.
Some pick and freeze.
Some prune and use/give away/chuck.I'm not cynical I'm realistic

Best way of using mint -
Leaves from 4-5 mint sprigs
2 sugar cubes or 1/2 ounce simple syrup
2 1/2 ounces bourbon whiskey
Mint sprig for garnish
Preparation:
Place the mint and simple syrup or sugar into a julep cup, collins glass, or double old-fashioned glass.
Muddle well to dissolve the sugar and to release the oil and aroma of the mint.
Add the bourbon.
Fill with crushed ice and stir well until the glass becomes frosty.
Garnish with the mint sprig.0 -

Rosemary
Sage
Parsley
Time
Rocket
Basil ( I think )

Rosemary can be clipped back fairly hard. Best not to cut back into old wood, but it will grow anyway. All the bits you cut off can be turned into cuttings to make another jungle, dried for storing, or used.
Sage is nearly as forgiving as rosemary for pruning, slightly less easy to take cuttings. Thyme can be sheared hard back. All three are fine to cutback now.
Basil just wants the tips cut off. Rocket I just pull up and resow. I resow parsley myself, but it can be cut hard back and will regrow passably.0
