Meal plans WC 30th June

    It's been almost a year since I last posted a meal plan on here! Back then, I'd just moved in with my boyfriend and meal planning had gone to pot. I've been trying ever since to get into the routine again, but it just never lasted more than a few days. So, I've sat and done a plan for the next month and will try my hardest to stick to it. I've also been batch cooking/preparing meals for the freezer to help a bit so am on a bit of a mission again. Here's the plan...

    Monday - fish pie

    Tuesday - pasta bake with garlic bread

    Wednesday - cheesy bean burgers...maybe! I will be doing last minute revision for an exam on Thursday, so may have to change this...

    Thursday - I'm at college, so either 'student night'* or we'll fend for ourselves!

    Friday - (was sweet and sour chicken) Bangers and mash! Forgot to take chicken out of freezer, so a last minute decision and much needed comfort food after a LONG week!



    Saturday - lamb meatballs in a creamy sauce with spaghetti/pasta

    Sunday - roast chicken (slow cooker) with all the trimmings

    *student night usually means toasted sandwiches as I don't get home until quite late.


    Let's see how it goes...

    You can make up the bean burgers and freeze them and then just get out and leave in the fridge overnight. I always make up a batch of them and freeze individually because DH doesn't like them so I sometimes have them with some salad for lunch. Would also save you a lot of time as once they're done you'll have enough in the freezer for a few meals.

    Things have been moved around a little as we didn't fancy beef 2 nights running so I made the pie and we are having it tonight instead.
    I worked very late last night until after 10pm so we just had the pizza as I had already made the bases so it was quicker.

    I often have to change my plans around but the plan gives me a basis for what we're going to eat that week, even if we have it a different day!

    [STRIKE]Mon- Ravioli (fresh)and salad
    Tue- sweet potato wedges chicken and sweetcorn[/STRIKE]
    Wed- cows cows (also known as couscous:rotfl::rotfl::rotfl:) and tin of bean salad (in vinegarette)
    [STRIKE]Thur- (late) Tin of Burritto with extra added veggies and rice[/STRIKE]
    Fri- Rice salad
    Sat- stir fry with noodles

    Just finished Thursday's tea and very nice it was to!! So I'll swap Weds to Thurs!!
    Go hopefully into each new day, enjoy something from every day no matter how small, you never know when it will be your last

    Thank you. Funnily enough I made them up on Tuesday night as had more time, then breaded etc on Wednesday before cooking. I will make up a big batch at some point as really do like them :)
