Sorry, I seem full of questions today.
I have a Burrito kit that I really need to use. It's been sat about for ages as OH turned veggie on me (although I guess I could to half and half with real mince in one pan and veggie in the other)
I have mince and the other ingredients to use up in the freezer but what I want to know is if I make the burritos could I freeze them? Obviously I wouldn't be able to freeze the lettuce or fresh tomato but what about making them up and freezing with just mince? Would the tortillas go soggy when defrosting?
Other option I guess is to freeze the burrito mince in portions and the wraps individually and take out to make up like that for lunches.

You can make and freeze burritos, ( make up as usual, add shredded cheeese, roll and wrap them individually in plastic. Prep lettuce and tomato and microwave burrito to reheat, adding fresh toppings after) but I'd actually just take the tortillas out of the kit and freeze them in the pack. The other parts of the kit probably have a longer shelf life, although if memory serves, the sauce would freeze ok too and the salsa will keep for ages.0

I actually do this about once a month. I don't use a kit but we like wraps with spicy mince/chilli, rice and cheese. I've found that if you mix the rice into the meat and add a slice of cheese to the middle then it works out better as grated cheese just disappears and the other stuff gets mixed up anyway, it helps for even distribution.
For about £4 I can make up 10-15 wraps that get thrown in the freezer then can be just bunged in the microwave for a few mins and they're completely fine. My bro favours a couple of these when he gets in from the gym and my friends kids love them when they come over, they can't even tell there's veg in them!0 -
Frozen burritos are sold all over North America.
Just the meat, beans, cheese.
Never with fresh veg.
Or you could just turn them into an enchilada bake after defrosting them and serve salad on the side.0
