Parking eye parking charge notice

I received a pnc from parking eye. Having used the same carpark previously I saw no reason to keep reading signage around the carpark as thought I knew what was what. However it appears you are now meant to enter you registration details into a machine of the store. I do not remember seeing a machine & no staff member kindly prompted me (which would have been good customer service for a new process!) anyway. So I used the store for who the carpark is for. & paid via visa.
My query then - I was going to appeal by using my bank statement as evidence that I had used the store however as I paid by visa the date if the transaction is 3 days after the date I actually was in the store. Further my name will be on the statement & advice on this forum is not to admit you were the driver but to speak in 3rd person!
What is my best action? Just to pay & be done with it or do I still have a chance to appeal & if so do I use bsnk statement & disclose my name or not ? Help!

the details on the statement do not prove who was driving or who was a passenger , the passenger could have shopped that day or used their own card to purchase something for the driver
what would I do ?
you cover up the name and all but 4 digits of the card number with a post-it or blank card , scan it or photocopy it and use it as evidence , stating the full unredacted version will be made available if and when the PE + landowner contract is made available (and unredacted too)
bearing in mind that PE have no qualms about redacting paperwork , why should you ?
appeal as RK, saying that on the day in question the driver (or a passenger in the vehicle) shopped at blah blah and the redacted statement is enclosed as proof of lawful use of the land and the shop etc
use the template in the sticky thread and add it as point 4)
also complain to the shop, retailer or landowner too0 -
It was a notice through the post.
