Parcel2Go lost parcel 8 weeks ago.....

Good morning
I will try keep this as brief as poasible. Basically I sent a parcel to Austria with Parcel 2 Go. I paid for the extra insurance to the value of £500. I received a text 3days after posting stating it had been delivered. The recipient mesaaged a week later saying not received. The tracking num said delivered one day then in transit the next. After what feels like hundreds of live chat conversations later they advised me to make a claim, did this...10 days later they say the parcel has been found and being redelivered back to their office. Another 2 weeks have passed and still customer services are saying it's due back.
I do not believe a word and want to take legal action. Can anyone point me in the right direction?
