Using an old Android smartphone as a dash cam?

Just been watching the BBC website and all these 'crash for cash', and now 'flash for cash' scams.
I was hoping to utilise an unused Galaxy Ace smartphone to operate as a dash cam.
Obviously, there's a lot of dash cam apps, but researching these, I can't really see that using an old smartphone as a dash cam would be viable.
Does anybody know if it is possible to do this?
My concern would be having to reboot or switch the app on every time I get in the van or set off as I make multiple appointments every day and can't have to keep remembering to press record each time I drive off.
Ideally, I'd like to switch on the ignition and have the app immediately go into recording mode, or for the app to stay recording. Can the apps stay open in this way?
Does anybody know if the apps can do this?
Alternatively, can anybody reccommend a good dedicated dash cam?
