Why would there be a credit check after a mortgage offer??

Probably to check that nothing has changed since they offered. Usually an offer is based on the fact that you will not take out any more credit accounts while the offer is in progress. If you do then they will recalculate.-== CREDIT BUILD IN PROCESS 30% COMPLETE ==-
