Ooh, where to begin... Stop putting butter and sugar on the carrots. Broccoli, cabbage in it's many varieties, sweet potato instead of normal potato, beetroot, cucumber, salad leaves in their many varieties, sugarsnap peas, leeks, Brussels sprouts, pak choi, parsnips, aubergine, peppers in all colours, tomatoes, mushrooms, onions, swede/turnip, courgettes, asparagus... And there's loads more kinds of bean in the canned aisle than just baked beans.
How about this for a plan? Each time you go shopping, go in the veg aisle and get a veg you don't usually cook or have never had before. Then look up a way to cook it and decide which dinner you'll do it with.
And you have to try a new food several times before you know you like it, so don't decide you don't like it the first time you have it, try it several times. If you don't like it, try a different way of cooking it.0 -
If I may throw in a late one... thinly sliced aubergine and courgettes, dribble a bit of chilli or garlic oil over them and bake in the oven. They work as a side dish, mixed through pasta or cous cous or, more usually, eaten in forkfuls from the pan as soon as it comes out of the oven.Some days, it's just not worth chewing through the leather straps....

Today in my steamer i have = new potatoes, white cabbage and carrots.
I also have cauliflower cheese that came out of the freezer. (cooked to much last week). going in the oven with breaded chicken breasts.The secret to success is making very small, yet constant changes.:)0 -

That sounds delicious. What sort of quantities do you use? How long in the oven? Do you prepare the aubergine at all or just slice it up? I'd love to try this, especially when courgettes start coming in the garden.0 -
Pickled veg? I love onions, beetroot and gherkins etc with cold meats and salad, potato croquettes, or even chips.
Added to sandwiches it increases veg intake without any extra preparation. Pease pudding in sandwiches with cold meat or beetroot is a particular favourite here.
