Pulled pork leftovers

Very tempted to try making pulled pork but what's good to make from the left overs? I thought about used it in a stir fry with rice but any other budget conscious ideas? Many thanks.

Very tempted to try making pulled pork but what's good to make from the left overs? I thought about used it in a stir fry with rice but any other budget conscious ideas? Many thanks.
My lot love it in sandwiches, hot or cold. In fact if you cook some of those bake at home rolls and serve them warm with the pulled pork and apple sauce with some potato wedges on the side it makes quite a substantial meal.
The pork freezes well too.0 -
Ive used it before to make an enchilada/burrito type dish. Fill tortillas with it and some rice, line up in a dish. Pour some passata over the top and cover with grated cheese.
I always seem to end up with loads of it in tubs in the freezer.April £5 a day challenge- £15.05/£1500 -
It's fine to freeze - I find the flavour actually intensifies in the freezer, a bit like bolognese and chili.0

I always make home made pizzas with leftover pulled pork, if you have any of the BBQ sauce left you can also use it in the pizza base instead of tomato.

I second the mexican inspired ideas! My favourite is in a quesadilla with cheese and salsa. Or as a topping for nachos! Or mixed through with mexican-inspired rice (spiced with taco seasoning with beans, sweetcorn, peppers and onion added in).
I've also eaten pulled pork in lettuce wraps.
I like my pulled pork in a fairly strong bbq sauce. I don't make it often, as it's never quite tender enough coming out of my slow cooker.. I'm probably being overly picky though!Swagbucks Amazon gift vouchers 2014 125/250
