You can garden on land sprayed with glyphosate almost immediately, as it neutralises on contact with the soil. It needs a day's contact with the weeds before rain for the best results. Nothing shows for 2 weeks, but any green plant touched is doomed.How long after using weedkiller could you safely plant edible things or does the advice given so far include edible things?
That depends which weedkiller you use.
If you use glyphosate, as Dave says, you need to leave the sprayed weeds in place long enough for the herbicide to spread throughout the plant so you wouldn't be replanting quickly anyway.0
