I blanched and froze some fresh cauliflower then defrosted it saturday evening to make cauliflower cheese with the sunday roast but I didn't have any cheese or cheese sauce so it never got used. I have nothing else to use with the cauliflower. Can it be refrozen or is is just best to bin it all?

A general rule is to never refreeze something that has been defrosted. You could still use the cauliflower in a few days. Then you can get some cheese and make a cheese sauce. That way you will not have wasted anything.It's really easy to default to cynicism these days, since you are almost always certain to be right.0

Thanks. Its been defrosting since saturday evening in the fridge and it probably won't be used until tomorrow at the earliest now if at all. I didn't want to put the oven on especially to cook it. Maybe I can microwave it and add the cheese sauce when I buy it eventually. I was wondering whether to cook it fully by boiling it or microwaving it then refreezing it.0

I try to make sure that I have everything else before I get anything out of the freezer that way nothing is ever wasted.It's really easy to default to cynicism these days, since you are almost always certain to be right.0

I always do too. But a change of plan and shops shut at 4pm yesterday and I was sure I had a cheese sauce in cupboard when I went shopping in the week. I really hate waste. The cauliflower was reduced to 50p and I cut, blanched and froze it the day I bought it. So not to much money wasted. Even so.... That's not the point :-( its still wasted food.0

Don't re-freeze.
You don't actually need to have a cheese sauce with cauliflower. If you don't like serving it on it's own, you can use it in a plain white (bechamel) sauce...it's really lovely.
Use it in a tomato sauce with other vegetables and serve with pasta or gnocchi with a bit of grated cheese, if you have it.
Make soup...either on it's own, but suspect you will need a bit of cheese there, or with other veggies that you have and blitz.0 -
It's good in a vegetable curry or just with gravy or tomato type sauce (like Bolognese).0

Hi. In the end I did use it all. I just bought a packet cheese sauce mix. It was ok but not a nice as normal. The cauliflower seemed soggy.0

I often use dying cauliflower to make a cauli and potato soup. In fact 13 year old DS often requests it! Just chuck the cauli, some chopped onion and a couple of diced potatoes in the pan with some veggie stock, leave it to simmer till it all falls apart then whiz it up to make it smooth. Sometimes we chuck a bit of grated cheese on top and stir it in, serve with some crusty bread (preferably warm and buttered, though I should be skipping the cheese, bread and butter or I'll never loose any weight...
)
