Put some canes in the ground near the bindweed - it will grow up the canes and make it easy for you to treat with glyphosate.

Be careful spraying the glyphosate - it will kill whatever plants it settles on.

Don't spray it, put the glyphosate in small jars and poke the tendrils in - lightly bruising helps - for an hour. Move pots on, and repeat. If you do this BEFORE digging (I know....), it'll trundle through the root system and kill all connected stems in a couple of feet from the dunked stem. I know it sounds tedious, but it is actually quite fast... faster than spraying, because it's so efficient at killing. And fun, 'cos it works so well. The other benefit is little risk of spray spreading to wanted plants.

A pair of tweezers helps keep fingers out of the glyphosate. You can also use it fully diluted, as the plants suck it straight up.

Works well with ivy (bruise leaves well), brambles, and other long shooted weeds. It's amazingly more effective than spraying.

I know you have dug.... it breaks the roots up, so this way might not be quite so wide-ranging, but I'd still do it that way. Cleared two jungle gardens that way in the last few years.
