Meeting Spend requirements on new credit card

I have an American Express Gold card that I am attempting to meet the spend requirements of £2000 in the first 3 months in order to receive the bonus points.
I'm two months in and I am only up to around £800.
I've paid my upfront line rental for 12 months on it, as well as paying other bills, but looking for ideas on ways to meet the required spend.
The value of the points is around £100.
I obviously don't want to waste money, but does anyone have any ideas ?
I was thinking of purchasing gift vouchers/cards for shops I regularly visit.
Any other thoughts ?

Everything you buy In a shop use the card. Use it to make an overpayment on car finance or loans. Will be worth the 2% hit!0

do you have the money to cover the £2000 or in this case the extra £1200? If so if you haven't already paid it why not pay your council tax bill with it? I use a credit card to pay mine (although on a weekly basis due to budgeting). It helps you get something back :-)Paid off the last of my unsecured debts in 2016. Then saved up and bought a property. Current aim is to pay off my mortgage as early as possible. Currently over paying every month. Mortgage due to be paid off in 2036 hoping to get it paid off much earlier. Set up my own bespoke spreadsheet to manage my money.0

I second this idea. If you buy the gift cards from Morrisons you can get discount on your petrol!
I bought several £50 gift cards for Sainsburys when I was doing a similar promotion for Amex. I could then spend the cards at my leisure. I didn't put all the money on one card in case it got lost.
