ipod shuffle question please

My wife and I, each have a shuffle and the music we have on each (quite different) we both want to change. However it has been almost two years since I downloaded it to them, that I can't remember the procedure.
We want to remove everything currently on the ipods and install a new selection which is ready on itunes to transfer.
I'm thinking that if I connect the ipod to laptop, all the new stuff will be added to the existing stuff, which is what I don't want to do.
Would someone kindly refresh this old geezer regarding procedure please.

The iTunes library on the computer is the master, the shuffle the slave.
Connect the shuffle to the computer and iTunes should mirror the library on the PC onto the shuffle, as long as you haven't selected the option to sync individual tracks.
If something is on the computer, but not on the shuffle, it will be added to the shuffle. If something is on the shuffle, but not on the computer, it will be deleted from the shuffle.
If your selection on iTunes is exactly what you want on both shuffles, and it's within the storage capacity of the shuffles, just connect each in turn, and you should end up with each having the same content as the iTunes library on the comp0 -

The tunes that originally were on itunes (laptop) and put on shuffle, were taken off itunes (laptop) and the new stuff awaits. Havnt been on ITunes for ages ( I need to change the tunes on my shuffle as well ... )
But from memory you could just tick or untick the various tunes.0
