Help! Court Notice Served!

Hi guys!
My wife visited our local co-op supermarket a couple of months ago, bought some shopping and ran into an old friend... Leading to them having a quick cup of tea together.
Weeks later my wife received a fine through the post for parking in the car park, stating that she was 27 minutes over the time allowed.
She knew nothing of this.
Due to being a member of this forum, we followed the advice that you should ignore them and they'll eventually go away...
They haven't.
Today she received a claim from from Northampton County Court for the amount of £215 for "damages arising from breach of contract" and "payment by the defendant to the claimant of the total amount"
HELP!
My wife is a very good woman who has never committed any form of offence and now she feels bullied by the same local supermarket she visits twice weekly.
Can she do anything?

Ignore hasn't been the advice for about 18 months now.
Who is the PPC? Co op have been paying these off when they are contacted.0 -

MaKaVeLi. CEL are a bunch of losers. Big time. They have a track record of losing cases and pulling out of cases. Look at the Parking Pranksters blog for reassurance. The members here will help you out. The first thing to do is tell your wife she still hasn't comitted any offence. Then get her to raise holy hell at her Co-op. They can instruct CEL to back off. CEL are attempting to intimidate you in the same way as Parking Eye. Except they are not as good at it. Someone here will be able to give you proper advice. The only further help I can offer is to say DO NOT PAY THEM.0

I have written a message to Co-op through facebook, as they seem to be active on there. I have simply stated what has happened and have told them that there is no way we are paying it and if this continues then we won't be shopping with them anymore.
I'll let you guys know what comes of it.

The from of the claim form says
"Date Of Service - 14 May 2014"
This can't mean that tomorrow is the limit for something, can it?

No - the date of service is two days from the date of posting to allow time for delivery - looks like yours arrived a day sooner than expected - you have 14 days from the date of service to acknowledge receipt of the claim - if you when you acknowledge you select I wish to defend in full you will have 28 days from the date of service to submit a defence.

Make sure you contact CO OP head office in writing, not just through Facebook.
Some of the lower order don't know what is happening and a few Branch Managers have told customers there is nothing they can do.
Prankys blog that I linked to is a good starting place and has a phone number on it. they will provide an address.0
