Yet my CV is listed as "Microsoft Word 97 - 2003 Document (.doc)"

Is it saved as .docx or .doc?

Have you done Save As and selected Word 97-2003 Document (*.doc)?

.docx is a more recent file format that Microsoft introduced to later versions of Office.

To get round your upload problem ... open the .docx document in Word, then Save As and choose from the file format list .doc

Any organisation that won't accept .docx after all these years (since MS Office 2007 was released) is probably not one you'd want to work for. They've had 7 years to download the Compatability Pack...

There are numerous reasons why they may not wish to use docx files. Lack of installed compatibility pack probably isn't one of them.

one example - Doc files are easier to programmatically search than docx files. Docx files are really a collection of xml files in zip format so you have to unzip first before searching. Since new versions of Word can still produce doc files, why go to the expense of modifying your search software? MSE principles at work in a large company

I would upload my CV as PDF anyway. There's no need for them to be able to edit my CV and secondly you avoid problems with the formatting if they use a different versions of MS Office.
