Boarding out ex-water storage cupboard.

Hi...we have just had central H. put in.The old hot water storage tank has gone. There are a few redundant pipes from old Rayburn system left that I'm happy to remove. What is the best way to make it a usable storage cupboard?...Plasterboard? ...plywood?....any advice appreciated....oh...the switch and cable that operated the immersion in the tank is still there...I believe this is not connected .. but not sure...how do I deal with that? Thanks.
