Can I freeze eggs?

    If you have the space in the freezer and are going to use them up in cakes etc why not make your cakes or even pancakes and freeze them now.A stack of pancakes with greaseproof paper between each one doesn't take a lot of space up and is easy to reheat when you only need one or two Cake baked and sliced (especially fruit cake ) freezes well and again you can use a slice at a time for packed lunch boxes.I to ignore dates and use my nose its what it was designed for.If it smells ok then chances are it will be OK .I have been cooking and using eggs for almost 60 years and in that time I could count on my hand and have fingers left over how many bad eggs I have had.When I was a little girl we had chickens kept for their eggs (then eaten eventually :):)) and to my knowledge not one chicken laid an egg with a date on it .My late ma-in-law used to keep eggs in isinglass if she wanted to make sure her hens were going off lay she always had eggs in store

    Sodium silicate was also used as an egg preservation agent through the early 20th century with large success. When fresh eggs are immersed in it, bacteria which cause the eggs to spoil are kept out and water is kept in. Eggs can be kept fresh using this method for up to five months. When boiling eggs preserved this way, it is well advised to pin-!!!!! the egg to allow steam to escape because the shell is no longer porous.[1

    No idea where you would buy it today though

    If you are freezing eggs, you have to separate them into yolks and whites. they freeze fine that way.

    I found that whole yolks turn funny (a bit solid) after thawing so I won't bother again with freezing them - but I have not tried the scrambled method yet! Whites on their own are absolutely fine, which I freeze in small tubs or small freezer bags. I now make fresh pasta and freeze that, one way of using up eggs....

    daft question; how do you freeze them? just as they are in their shells?
