I was going to suggest Salad in a Jar, too. It is very surprising how well salad keeps when it is sealed up in its own little environment, properly layered with the wet stuff at the bottom. I have some very pretty Mason jars for this purpose, but any jar with a lid would do so long as it's big enough to hold a lunch's worth of salad. Make sure to include plenty of protein in there to keep you feeling full!0

I do healthy little "quiches" by putting a slice of wafer thin ham in each section of a bun tin and pouring on top a mixture of beaten eggs, skimmed milk and freshly ground pepper. Then bake.
I have these for my low carb breakfasts at my desk at work.
I generally have salad for lunch, but freshly prepared each morning, so not much help to you there, although I might give the salad in a jar idea mentioned above a go.
I also snack at my desk on cherry tomatoes, little pickled onions (can't eat chocolate after you've eaten those), grapes and homemade popcorn.Zebras rock0 -

Yep, no pastry at all.
No carbs, and also works for weight watchers simple start, and slimming world plan

Thank you everyone - I love all the ideas - I'd never heard of frittata or crustless quiches before! :T
I like the sound of just grabbing boiled eggs and ham cups from fridge in the morning too!
I may also give salad in a jar ago - although I don't have any jars ...

Just put a huge crustless quiche in the oven - bacon, onion, courgette (fried up together) and wholegrain mustard in a roasting tray. Vegetable sticks (carrots, celery, pepper, cauliflower, brocolli) and dips. You wouldn't need to freeze them either make dip yourself or buy. Then a boiled egg, cheese, tinned fish for protein.0
