Low-carb freezable or batch lunches for work

I'm looking to lose weight and I think low-carb lunches would help me. I've been taking frozen sandwiches to work to save money but get hungry by mid-afternoon and want something less carby and more filling. I've also been taking in frozen scones/cakes to stop myself being tempted by the chocolate machine.

I normally make all my lunches at the weekend and freeze them to grab and go in the morning.

I don't have microwave or hot water/kettle at work so it has to be something that is edible cold/after defrosting that I can make in bulk at the weekend. I don't think salad will work because it won't last and I don't think lettuce freezes anyway. Don't normally cook in the evenings so taking in left overs isn't an option either.

I can't think of anything other than chicken or cold meats :| Maybe cold chicken tikka massala without rice? I'm really stuck for ideas. Most of my colleagues buy sandwiches or sushi and eat at their desk.

Anyone got any ideas please? I can't be the only person who wants to have a low-carb lunches batch style? :)

    Frittata. You can make individual ones in muffin tins to make them more portable.

    Hot stuff in a food flask. Just nuke them before you leave and pour into the flask to keep warm. Eg vegetable soup, chilli, ratatouille, etc

    Chilli with roasted squash / sweet potato
    Chicken BLT - fried / grilled chicken breast acting as bread with bacon, lettuce & tom. not freezable as a whole, but can be thrown together in the morning
    Boiled eggs and tomatoes with smoked salmon
    Avocado with the boiled eggs
    Ham cups with baked eggs and peppers

    Also, look up Paleo muffin recipes - they use tapioca starch and coconut flour instead of wheat flour so they might be suitable.

    Salad in a jar! Google it, there are loads of low-carb/paleo ones. They keep for ages.

    I find salad lasts a lot longer following a few tricks. Main ones being removing as much moisture as possible using a salad spinner, and then storing with a sheet or two of kitchen towel over the salad before you clingfilm the bowl, to absorb any remaining moisture.

  • Grated cauliflower makes a good low carb alternative to rice. Can stir fry it for a minute or two. However, your work colleagues might not appreciate the aroma!

    If you want your lunch to be more filling add protein and most importantly fats. Real butter and some cheese, eggs or bacon will keep you feeling full longer. Good fats are your friend!

    Is crustless quiche the same as the slimming world quiche? One carton of cottage cheese, three eggs beaten and added to it then whatever meat, cheese, veg you fancy. (I use corned beef, ham, grated cheese, sweetcorn, mushrooms whatever happens to be in the fridge) I cook them in individual pie dishes then just tip them out when set and wrap them in foil and keep in freezer.
    Lovely with a bit of salad or on it's own (quite filling;))
    They're easier to transport if you pop them back in the dish and should be defrosted by lunchtime.
    I'm sure there'll be other recipe ideas on this website.:)

    I've never done Slimming World. I do huge roasting trays of it so start with a well-greased tray, 12 eggs, a big carton of cream, lots of grated Cheddar, then shove in what I fancy. The last batch was lardons and tinned green beans, I think. I'm probably on for a bacon, leek & Gruyere one soon. I cut it into squares and freeze wrapped in foil; take a portion out the night before and have it for breakfast.

    Fishy things, smoked mackerel , salmon , prawns with salad or a pate with a bread roll. I would just keep salad in pots in fridge to mix with fish at work and small pots with a dressing in them.
