    Unfortunately they do, just google "butcher fined" to see how many have been fined for mislabelling meat, and a whole host of other offences.

    Which is why I very specifically said good butchers. One word of bad publicity would finish a quality butcher. Unlike Tesco, Asda et al, who seem to carry on regardless.

    Meat is subject to quite strict traceability rules, policed by local Trading Standards officers (Google it if you don't believe me) and a quality local butcher is likely to be owned by one man whose entire livelihood is at risk if he breaks the rules.

    I know which I'd rather take a chance with, Tesco or a butcher like this (which I sometimes buy from):

    Unfortunately this seems to be the very reason why they break the rules. Some who owns the butchers does not have anyone above him, watching over him and keeping him on the straight and narrow. He also has full control over what he buys, and what he tells his customers it is.

    As for his livelihood being at risk if he breaks the rules, many of them claim they got into a financial situation where their livelihood was at risk if they DIDN'T do it. They were forced to break the rules or go under.

    I eat meat all the time.


    Your claiming your butcher is perfect. While he may do everything right, his suppliers might not be doing things to the same technical standards.

    The one man, can also profit a lot from taking short cuts.


    The individuals who work for super markets / manufacturer will not profit from taking short cuts as they will be paid per Hr / fixed salary.
