How quick/easy is it to remove tax?

Personally if someone was so petty to be cashing the tax disc in then i would walk away.

No people are actually happy to take the car without tax as long as you sell the car for less. Rather than paying the extra money for the tax (e.g. car traders).
The car was advertised for £1300 with 12 months MOT and no tax. I was happy to take £1200 for the car.
However, more than one person wanted it for £1100 with tax. Problem was that I did not have tax on the car at the time. So it meant that I would have to insure the car, just to tax and then sell it.
In the end we got fed up because we wanted to buy another car and couldn't without the sale. We did decide to cancel the advert but every time we went to tax and insure the car we got a call to view the car. Then they simply didn't turn up or called last minute to cancel.
So we taxed and insured it, end of story.

If several people wanted it at £1,100 with 6 months tax then that's probably the value of the car. I would have considered selling it at that. It's haggling. If you really wanted to achieve £1,200 with no tax then advertise it at £1,500 and negotiate down to £1,300 with the tax disc remaining on the car.:footie:

I wouldn't go as far as 'several people'. But from personal experience of buying and selling cars I'm pretty sure no one would have shown interest at £1500 or above (unless of course it was an immaculate example). The fact that it was advertised at £1300 and getting regular calls show it was correctly priced. Furthermore it was the second cheapest model in our region, with the next closest match up for £1400 (in Gumtree for 28 days) When I text them it was still for sale.
Most people who wanted it were just time wasters trying it on, thinking we were desperate to sell. Yes it would have been nice so that we could have bought the vehicle we wanted but that's life. It's just going to take a bit longer to achieve that goal.
For us it was just a case of having a limited time frame to do things. I'm confident that if we left it longer that one, genuine buyer would came along and bought the car for the price we wanted. It's happened in the past where I've advertised a car for sale and sold it for the price I wanted. It just took between a month or two.

Knowing nothing of the car or its value, if I wanted to sell my car for £1,200, I'd have advertised it for more than £1,300. People will want to 'negotiate' more than £100 off it.0

It's not always the case, people do sometimes come along and offer the asking price. Not everyone 'wants' to haggle.
I did sell a car (previously) for the asking price of £800, no negotiations. Nothing wrong with the car either. It had a fair amount of t&t and was priced based upon the current rates in autotrader (at the time).
I always try to advertise for at least £100 more than what I want to allow hagglers to have their fun. With cars that are selling for around the £1k mark that's still a fair amount. Of course with a car selling for £5k then perhaps £100 doesn't seem a lot.
But all in all its all about your circumstances, having the right conditions and selling at the right time.
Ideally we would have liked to have bought our next car before selling this one but we're just going to have to do it the long way.
