I pickle eggs but they come out really vinegary (I use proper pickling vinegar), does anyone know what I can do about that?
A nice recipe with eggs is mini egg cups, use a muffin tin and make basically crustless quiche as mentioned above, but in miniature. Great for snacks or packed lunches/picnics.

I know it is not a dinner idea but I am using eggs to make a Victoria sponge for the easter weekend which will be a nice indulgence with a mug of tea!0
