Eggs!!

Hi all,

At the weekend my OH managed to get a bargain on 30 free range eggs from a local farm seller at the carboot for £3!

However i need some creative ideas of what to do with them, preferable dinner ideas, i know you guys on this forum are good at thinking outside the *ahem* (egg) box. ( sorry had to be done!)

    And keep the shells - break them up and sprinkle them around fruit trees to keep slugs and snails off the fruit.

    Soufllee, uber easy despite the reputation, Economical, great with a salad for supper, and if for some reason they do fail they simply become ' savoury pudding' equally impressive ;).

    I needed to use some eggs up last night so made a pavlova and froze the yolks. Not a dinner idea I know.

    But just in case you can't use them all you can freeze all or some of them. I used ice cube trays so I know each is one yolk. (and one a yolk and a bit of white because the yolk split!)

    Savoury pancakes or use instead of cannelloni the following is an example but you could use your own pancake/cannelloni recipe.

    What about quiche or even easier frittata/Spanish omelette? Just add whatever bits of veg or meat you've got especially onions, potato, peppers, mushrooms, tomatoes. You could make several and freeze. Good for packed lunches.

    Scotch eggs.

    Crustless quiche - No pastry involved. Whisk up eggs add bacon, sausage,veg or whatever you like mixed together and baked until eggs are set.

    You can freeze them in ice cube trays, either as whites and yolks together or separate. Don't freeze a whole egg it will burst. X
  • My DGD`s favourite `eggy baskets` - take a thick slice of bread, cut a hole in the middle, and crusts off (if you must) butter both sides, drop into a warm DRY non-stick frying pan, then break the egg into the hole in the middle. Turn over when the egg white looks half translucent, aim for golden brown both sides and yolk still slightly runny.
    Also, if you haven`t used them up in a week or 2, hard boil, remove shells, and put in a jar with pickling vinegar - 10 days later pickled eggs ready.

    I pickle eggs but they come out really vinegary (I use proper pickling vinegar), does anyone know what I can do about that?

    A nice recipe with eggs is mini egg cups, use a muffin tin and make basically crustless quiche as mentioned above, but in miniature. Great for snacks or packed lunches/picnics.
