Using up leftovers - help needed for ideas!!

I have some cooked leftover lamb which I was going to put in a (jar of) curry sauce, but would like to do something a bit different. I gave half a cauliflower, Tim of chick peas, tinned tomatoes, peppers, onions, mushrooms, naan bread, rice, lots of spices which I never know how to use.....

Hi,
Depending on which spices you have you could make a homemade rogan josh type curry sauce which is tastier and cheaper than a jar (my DH is the expert in making this).
For 2 people (or 3 if you're not greedy like me...)
Fry 1 large onion in a little oil till soft.
Add peppers or whatever you have now if fresh (later if frozen).
Add 1tsp each of coriander, paprika, chilli powder and cumin (if you don't have them all, it will be ok, but won't taste quite as nice)
Add a sprinkle of cinammon and ginger, and a bay leaf (if you've got one)
We use frozen garlic cubes (more garlic) but this is optional.
Then when this is mixed together, add tinned tomatoes and 200ml of stock (we use beef but not essential).
Let it simmer for a good 20 minutes - it won't look right at first, but it will reduce and the flavour will develop
You could use the same sauce with most meats, although I don't think it works as well with chicken. You could do a veggie version of the same sauce with the cauliflower and chickpeas. I might add a potato to this also.

You could still make it - we LOVE garlic (probably a bit too much), but maybe put extra onion in and it would still work, I'm sureDebt remaining:
