I am flying back on Tuesday so maybe it's because I wanted to check-in for both flights at the same time.

Aha that'll explain it. You could've checked in for the outward flight only any day from Friday onwards but to check in for both at the same time you had to wait until Tuesday - 7 days before the return leg.

I obviously got lucky with my 7th April out / 11th April Ryanair return as I was able to check in for both legs as usual. I didn't pay to choose seats, as I'm pathologically averse to paying for extras (other than their booze which I can swallow-lol) but got allocated 2 aisle seats opposite each other- which is fine - even though the 2 people on our booking checked in online at diff. times.

So are you guys saying one cannot simultaneously check in for both outward and return trips as before?

You couldn't do that before either if your flights were more than 15 days apart (officially, in practice online check-in often opened up a bit earlier than that). Now it would be 7 days, unless you prebook seats.
