Have just re-read what I wrote before, and it seemed very negative, so just to redress the balance here's a link to the website of a company that appear to be doing something similar to what you have in mind -

It's very successful (reservations required, people queuing out the door on a normal Tuesday lunchtime and slates on the tables showing how long you've got before the next customer with a reservation is due to turn up) - but note the level of experience of the people running it, and their opening hours.
