A bit of a cheat but makes an amazing pizza (in my humble opinion).

Use a flour tortilla and top with a bit of grated cheese, a thin spread of a spicy tomato sauce, few spinach leaves, olives ..... whatever you fancy or whatever you have in the fridge.

I cook this on the simmering plate of my Aga with the lid down but am sure that a frying pan or skillet on a moderate heat, with a lid on for some of the time would be fine. Takes just a few minutes and the result is so crispy and light. Possibly a quick squirt of one of the 1 cal type oils in the pan first. Nice sprinkled with a tiny bit of olive oil and a few rocket leaves once cooked.

Tried a "white" pizza today using a few bits of onion I had boiled till soft and a few thin slices of apple also simmered for a couple of minutes, a thin spread of a mashed up blue cheese, tiny amount of finely grated cheddar and a few spinach leaves. Again delicious!

Whatever filling you try .... less is more .... do not overload or it will be soggy.

Must try a version with a bit of tuna.

OH will not eat any other form of pizza now and I am happy as minimal cost and minimal effort and cooking time.
Thank you for this site :jNow OH and I are both retired, MSE is a Godsend

I use the pizza base recipe from The Takeaway Secret, which I know is a favourite of many folk around here (and worth every penny to buy the book rather than just sharing individual recipes). I just stick the ingredients in our breadmaker rather than following the instructions for making it by hand. Ever since I've started using that recipe, I've had nothing but rave reviews from friends and family about how good the base is. Friends get genuinely excited when I say I'm planning a pizza night!

    I use: http://www.jamieoliver.com/recipes/bread-recipes/basic-pizza

Usually half it and make my hand, then cook on a pizza stone - it's delicious and the semolina makes it easier to work with and less sticky :)

Ha, I have that book, I didn't even think of looking in there for pizza base! Must go dig it out.

I made a delicious cheesy garlic bread last night with the leftover dough from Wednesdays Pizza, to die for.
