Help! I can't make an omelette!

Just a quick question, can I have the things I want to add in the pan before I add the eggs? For example, fry some potato and chorizo and then add the eggs to the same pan? I don't fold the omelette in half as I don't like it like that. I like spanish omelette so I suppose that's what I have in mind. I feel like I'm asking such silly questions, so sorry.

No ? is silly and everyone will have their own pitch.
My answer is: NO!
Otherwise you are no longer making an omelette [although the result will still be tasty] hence modus operandi described+m/w prep of extras. An omelette pan works best hot-cleaned, quick wipe with kitchen paper then in goes your butter or oil [half and half is an old Varoise way]...sizzle sizzle, pour in your lovely lumpy mix and off you go.

Hooray! I made a successful omelette. Thanks so much for all of your help - now just need to do it when the OH is about. It's taken me 42 years to learn how to make an omelette.
What method did you use?PAYDBX 2016 #55 100% paid! :j Officially bad debt free...don't count my mortgage.

I thought that was the method, room512. Do the goodies in the pan, after about 20 mins, add the eggs, get them a bit cooked and under the grill for a spell. Spanish omelete is a meal in itself. :cool:0

I used a splash of oil and a knob of butter. Seasoned my eggs and put it in the pan and then poked about with a fork for a bit(!), then when the top was nearly set I flipped it over for about 10 secs then put on a plate and topped with cheese and chorizo. I have a fear of runny eggs which is why I flipped it and was unsure about putting the frying pan under the grill in case I melted the handle. I used a larger pan this time than I have before.
So if I am making a Spanish omelette when do I add the potato, onion and chorizo? I'm getting confused...0 -

the way my nan cooked an omelette was.
whisk up a couple of eggs, get the butter melted in the frying pan, then turn on the grill, put the eggs in the frying pan, and fry gently for a minute or two until the bottom sets. then put the pan under the grill and grill for a couple of minutes til the top sets.0
